Some animal shelters may take old bed sheets however they usually have enough supplies. Ask around to find out which shelter is currently in need.
Some charities may also take them to give to those in need but given the abundance of donations of this sort, they typically require that they are in excellent condition.

Bedsheets & Linen in good condition are often collected in door-to-door collection drives and cash for trash events. Items that don't meet their quality standards may be rejected or sent for incineration.
There is little transparency over what happens to items “recycled” this way but whenever someone is willing to pay for a material, there is a strong chance some of it will get resold or reused.
